I really miss working with all the creative people there, but I just realized after six years of being there I needed to move on and explore my own interests. There wasn't anything except the normal office politics, and every corporation has that.

This is why you tie a roast together, to create uniform cooking. Or why you tuck in the legs of the chicken, so they're not sticking out and getting burned.

If you don't have a rack, the meat will still cook beautifully, but it will end up cooking and steaming in its own juices, which would be steaming.
