We've made it a multiple of ways. Jack comes up, and Larry comes over. We get around the table and argue over which one is better.

He got some honey from us and made mead. He was trying to make still mead (no bubbles). Accidentally, after he bottled it, he thought it was done, but it started to sparkle.

Mead works very slowly. Sometimes a grape ferment will basically be done in a week or so, whereas the mead you see out there has been bubbling for months, and it will keep bubbling for months.
